In gitlab how can I limit an admin user, to make him can only access projects which he had been added in?
You can’t. An admin user is someone how can see everything on the server. I suggest you leave the admin account for only the people who need to administer the system, and anyone else to be restricted and have standard user rights and access to projects via groups, etc.

There is a new feature in 13.11 Admin Mode which does not completely prevent Admin to see everything, but it helps at least a little
