Help with standalone nginx setup

Hello, I am having issues getting gitlab to work with nginx not packaged with omnibus.
I have followed dome guides as I am migrating my server from one DO droplet (using the gitlab one button installer). To a larger droplet with other servers. I was following this guide to do that: https://medium.com/gits-apps-insight/migrating-gitlab-to-another-server-990092c5179

once I installed it, it wrecked my server and took over my nginx. So then I went and found this about disabling it https://www.digitalocean.com/community/questions/gitlabs-droplet-for-other-uses?answer=18252

The prox didn’t work, so then I found this https://docs.gitlab.com/omnibus/settings/nginx.html and it led me to a gitlab with an nginx config file.

my /etc/gitlab/gitlab.rb file contains:
# external_url “http://[redacted]”

 gitlab_rails['gitlab_email_from'] = "admin@[redacted]"
 gitlab_rails['gitlab_support_email'] = "support@[redacted]"

 gitlab_rails['smtp_enable'] = true
 gitlab_rails['smtp_address'] = "[redacted]"
 gitlab_rails['smtp_port'] = 465
 gitlab_rails['smtp_user_name'] = "admin@[redacted]"
 gitlab_rails['smtp_password'] = "[redacted]"
 gitlab_rails['smtp_domain'] = "[redacted]"
 gitlab_rails['smtp_authentication'] = "login"
 gitlab_rails['smtp_enable_starttls_auto'] = true
 gitlab_rails['smtp_openssl_verify_mode'] = 'peer'
 gitlab_rails['smtp_ssl'] = true

letsencrypt['enable'] = true
nginx['enable'] = false
nginx['redirect_http_to_https'] = true
nginx['ssl_certificate'] = "/etc/gitlab/ssl/gitlab.crt"
nginx['ssl_certificate_key'] = "/etc/gitlab/ssl/gitlab.key"
web_server['external_users'] = ['www-data']
external_url "https://[redacted]"

My /etc/nginx/sites-available/[redacted] has this

I have also done the gitlab-ctl reconfigure and systemctl restart nginx
I have where my other sites are now working, but gitlab is just giving me the standard default nginx index.html page.

Blockquote

I figured out my issue with being in the server block. Now my website works but its taken over my entire nginx. So now my other server blocks redirect to my gitlab… And default isn’t set on it.
