I was wondering if there was a generic buildin feature to produce gitlab docs reusable by any gitlab documentation repo ?
is there a specific syntaxe ?

No because the Gitlab docs is something completely different to the wiki or markdown files written in a Gitlab repo.

The GitLab docs are a Nanoc site. Nanoc is a static site generator, so the source is kept here and deployed to GitLab pages via a pipeline.
You could use any static site generator (Jekyll, mkdocs, hugo etc.) to do the same thing. You will find various example repos to look at here.
