the company I work for is currently using GitLab self-managed enterprise edition with Free Plan and is in the process of deciding if they should go with GitLab Premium subscription. They want some of the features available in the Premium tier.
We have a couple of questions that we would like to know the answer to.

What will happen if we choose to not renew the Premium subscription after the annual period ends? We are not asking about cancelling, just letting the period end and during the grace period go back to Free Plan.

Can we keep using the instance like we did with the Free Plan? Without the features from Premium of course.

Could moving from Premium to Free cause any issues with GitLab functionality or the source code we store on the gitlab server? What about issues, pipelines, and other parts of the GitLab server which had Premium features alongside the Free tier features?
I read the FAQ and I could only find information about what happens when the current plan ends (grace period into read only) and how to downgrade to Free Tier. There was no clear information if the GitLab instance would continue to work like it did before we upgraded to Premium subscription from Free Tier.
