Reading through the documentation I find a lot of use of variables, especially in the service desk mail templates. Since service desk can also create issues through a template, I was wondering if there are variables available within the template like the issue description, or adjust the title of the template. A good example of the variables I’m looking for is in the thank_you.md and new_node.md templates documentation:

I’m not sure I understand you correctly, but maybe this helps:
Right now GitLab can only create Service Desk issues via email. An external participant needs to send an email to the Service Desk address of your project. That will create an issue.
You can use a template for Service Desk issues. Note that the Service Desk template will be appended to the original converted email text. There are no variables available in that template, but you can use markdown and quick actions.
